For the best results, take the lamb out of the refrigerator and remove it from its packaging about 20 minutes before cooking. Preheat your oven to 160°C/350°F (Fan 150°C/Gas Mark 3). Place the lamb in an oven-safe dish, add stock, cover, and cook for 2 to 2 1/2 hours. Ensure the meat is piping hot before serving. Do not reheat. For optimal tenderness and juiciness, let the lamb rest uncovered in a warm place for at least 5 minutes after cooking. These instructions are meant as a guideline only.
